Meet Dave Conroy, the East Coast Region Manager for International Beverage Company. Drink of the Day: Cinnamon Toast

And so this is Christmas!

Anywhere you go these days, you are sure to hear some holiday music playing at the store. This weekend is heavy shopping and shipping weekend. The lines at the post office have already doubled. The malls....well, you know, they are crowded but that's a good sign right? The economy is supposed to be getting better.

The New York Times reported today that U.S. employers have stopped laying people off, at least during the holidays. The jobless rate is the lowest currently (10 percent) since the recession began, the report says.

While there is a nagging concern that this trend might change come January, one cannot live in fear and anxiety. After all, this is the holiday season.

Let's drink to that. Today's drink comes from Middletown Store Manager Raymond Kimble and is called Cinnamon Toast. Ray, as he is popularly known, is very knowledgeable about bartending and can answer any questions you have about wines and spirits.

To make this drink, Ray suggests mixing 1 tablespoon cinnamon powder with 1 tablespoon sugar, add to that one-and-half-ounce of your favorite spiced rum, then mix in 6 oz of hot apple cider and serve in a mug.

On the way back from work, it is a pretty sight to see the neighborhood light up with holiday spirit.

Tonight we celebrate the community spirit found in one's own nook of the world during the holidays.

The drink, Black Cherry Bourbon + coke, is a contribution from our team member Greg.

To prepare this, mix 1 part Jim Beam Red Stag Bourbon with 2 parts coke or cherry coke. Then add ice and stir.

According to Greg, this drink is a great twist of the classic whiskey and coke.

Today is Dec. 1 and the countdown to Christmas is on.

With the holidays coming, we know that you have tons of holiday stuff to do once you get home from work. So, we thought we have to do something to keep you in good spirits.

Throughout this month, as the countdown continues, we will bring you a "Drink of the Day" recipe, just a little something to make this December special for you.

Craft beers are as American as apple pie.

These beers are usually produced in a specialized brewery and are brewed with great care to achieve distinctive taste and flavor. They are also produced for a specific target audience who prefer that style. Craft beers are never mass-produced but there might be exceptions. The largest American craft brewery is Samuel Adams.

With brewpubs, microbreweries and restaurants, the craft beer scene is New Jersey is hot and happening. My three favorite brewpubs in the state — Harvest Moon (New Brunswick), Triumph (Princeton) and Basil T's just down the road in Red Bank, serve some great selections. The food to go with beer isn't bad either, with Basil T's Italian grill ranking pretty high on the culinary scene. I highly recommend trying a "growler" at your nearest brewpub because we have a lot of new varieties brewing in the Garden State (Check out the Garden State Craft Brewers Guild) and there will surely be more than one that will knock your socks off.

But if you are not feeling adventurous enough to venture out, and just want to relax at home and chill, we highly recommend that you drop by Spirits Unlimited Middletown and grab your favorite craft brew. After each holiday weekend there is that time where you just need to ease into your daily routine, get back into your groove, get on with your to-do list and relax.

This week we bring you Jonathan Wurm who will help you do just that but with style — beer style, that is.

Jonathan is the Imports and Crafts Account Manager with MillerCoors and represents Leinenkugel Brewing Company, one of the seventh-oldest brewery in this country. It is reported on the official company website that Jacob Leinenkugel established this brewery in 1867 and handed down the tradition to his successors. Five generations and 140 years later, this brewery can still inspire you with its craftsmanship, taste and quality. The magic continues to brew in Wisconsin as we speak.

Now, why Wisconsin, one might wonder. The reason is pure and simple: water.

When Native American tribes settled in an area, they did so after determining the location's natural attributes, like water. In Ojibwan, Wisconsin means gathering of the waters, according to the Leinenkugel Brewing website. And for Mr. Leinenkugel, the waters of the Chippewa River, Duncan Creek and Big Eddy Springs was inspiration enough to start brewing.

Jonathan says that officially there are 140 different styles of beer as per the Brewers Association.

A quick FYI: The Brewers Association is an organization of brewers, for brewers and by brewers. More than 1,000 US brewery members and 19,000 members of the American Homebrewers Association are joined by members of the allied trade, beer wholesalers, individuals, other associate members and the Brewers Association staff to make up the Brewers Association. This week we take you back to Spain, home of some great red wines that would be perfect for the Fall table.

We have our expert on Spanish wines, Peter Fairfax talking about a wine from the Campo de Borja region, the oldest region in the world for Garnacha.

According to Peter, Bodegas Borsao S.A. was founded in 1958 in the town of Borja, called Bursao in the 4th century B.C.

He said this winery represents what can be done with Garnacha. Through meticulous selection work in the fields and at reception time in the winery, modern winemaking produces these highly fruity wines. They are best examples of the region known as "The Garnacha land of Spain,” the lower part of the Ebro River.

The wine he is showcasing today, the Viña Borgia 2008, is located in our Discount Case Corner at Spirits Unlimited Middletown. It comes from vineyards that are located 1200 ft in elevation on chalky white limestone and sandy soils with some gravel.

The vines are planted primarily in the vaso system. The wine is 100% garnacha and is all fruit, as it is stainless steel fermented.

Dr. Jay Miller from The Wine Advocate said the 2008 vintage has a nose of violets, spice box, and black cherry. It is easy going, he remarked, as well as round and savory.

"This forward and friendly effort will drink well over the next three years," Miller noted.

At Spirits Unlimited Middletown the 2008 Viña Borgia is priced at $6.99 per bottle. With 25% case discount the price is $63.73 per bottle, which adds up to a savings of $16.56 per case.

October is the national Breast Cancer Awareness month and what would be a better way to show support than to help prevent it by spreading the word.

In the spirit of sharing and caring Spirits Unlimited Middletown has created an awareness booth highlighting the Hope Shiraz, selling at an amazingly low $10:99 (750 ml) per bottle, and the Houdini corkscrew at $29.99 each.

The shiraz comes from the Hope Estate, located in Hunter Valley, Australia. It's the vision and labor of love of a pharmacist turned winemaker, Michael Hope, who lost his own mother to cancer.

According to the official website, the shiraz exhibits an elegant style, with plum and spicy pepper characters that have been enhanced from time in French oak.

The wine is a product of the partnership between Michael Hope and the National Breast Cancer Foundation and the money raised is used for research work for prevention and cure.

According to the Mayo Clinic, breast cancer is cancer that forms in the cells of the breasts. Breast cancer can occur in both men and women, but it's far more common in women.

After skin cancer, breast cancer is the most common cancer diagnosed in women in the United States. But breast cancer rates have fallen in recent years, though doctors aren't certain why. Still, for many women, breast cancer is the disease they fear most.

Public support for breast cancer awareness and research funding has helped improve the diagnosis and treatment of breast cancer. Breast cancer survival rates have increased and the number of deaths has been declining, thanks to earlier detection, new treatments and a better understanding of the disease.

Spirits Unlimited Middletown is happy to present to you the experienced voice of Peter Fairfax, who represents an importer from Spain, to present to you three wines that would be great selections for the Fall.

As part of a three-part presentation, this week Peter will explain to you the nuances of the Sierra Cantabria Rioja, a 100% tempranillo from Rioja, Spain.

This wines comes from the vineyards owned by the Eguren family. According to the official bodega Web site, since 1870 generation after generation of this family have been dedicated to grape growing and to the elaboration and ageing of great wines in one of the most prestigious estates in Rioja.

Situated on the border with France, this area is situated in a unique location, between the River Ebro and the Sierra Cantabria mountain range. This mountain range has given the name to the winery and protects the vineyard from the cold winds from the north, creating a specific microclimate for the cultivation of the vines and therefore providing a differentiated personality to the wines.

Peter said that he had personally visited these vineyards and will share his amazing experiences with Spirit Unlimited Middletown customers in the future.

L de Lyeth Merlot

For a bright, sunny fall afternoon or evening what could be better than lazing on your porch with some wine and cheese?

Ray suggests trying a merlot from Sonoma County: L de Lyeth Merlot. With blackberry and sassafras aromas in addition to zesty black cherry and spice flavors, this wine is perfect for the season.

This merlot comes from a long line of quality wines that has become a signature of the Boisset Family Estates based in Burgundy, France.

The estate claims it is an innovative, eco-minded, family-owned producer and importer of fine wines. Founded in 1980, it offer wines from a variety of countries and key production regions around the world, including Sonoma County.

The L de Lyeth Merlot comes from the Lyeth Estate, which was established by Chip Lyeth in 1981. Notably, this winery has the distinction of combining the flavors of cabernet sauvignon with the other major Bordeaux varieties, now known as the Meritage style.

In fact, Chip Lyeth became a founding member of the Meritage Association in 1988, which created the Meritage concept as a means of identifying blends produced in the Bordeaux style. Today it continues the tradition of blending family and tradition in its wines, winning praise from critics and consumers worldwide.

The L de Lyeth merlot with aromas of ripe black cherry and lively raspberry, is a well balanced wine. This ruby red wine also features flavors of plum, currant and hints of mint and spices.

It pairs well paella, lasagna, beef, pasta and cheddar cheeses.

Spirits Unlimited Middletown invites all customers and residents to the award ceremony scheduled for Saturday, October 3 at 11 a.m. The event will be held at the store, 853 Route 35 North, Middletown. There's plenty of space to park, and the landmark is the Circus clown. For further questions and directions, call the store (732) 957 9700.

Chef James Conroy will present the awards to the winners at the beginning of the event. In addition, all participants will also be given a Certificate of Participation.

At the ceremony, Chef James will prepare the two winning recipes and serve it to guests present. He will also discuss some of the other interesting recipes that were submitted during the month.

"Overall, it was a very rewarding experience going through all the unique recipes that I received," Chef James said. "It was heartening to see the creative side of people and I thank them for taking the time to send us their recipe."

And that's not all. Event Organizer Somdatta Sengupta will be present to talk to each participant and record their experience on camera. Each interview will then be posted on this blog, giving participants an opportunity to share their recipe and experience with the entire Spirits Unlimited Middletown community.

Manager of Liquor Operations Stuart Keats said he is happy to see the enthusiasm of Spirits Unlimited Middletown customers. "We are a family-owned operation. To us, our customers are the most important part of that family," he said.

Keats said he is looking forward to a fun-filled morning at Spirits Unlimited Middletown. "There's going to be food and fun, and after the award ceremony I invite everyone to take a look around our huge collection of wines and fine spirits."

Store Manager Ray Kimble said he anticipates having a great crowd tomorrow. "We are ready to host our first-ever award ceremony here at the store," he said. "We have made all the arrangements. All you need to do is come out and enjoy the cooking and tasting."

Spirits Unlimited Middletown is bringing to you a new feature starting this week: the Spirits Weekly Wine Webinar.  

Each week, one of the wine experts from Spirits Unlimited Middletown will share with you their insight about a wine or wines that they think stands out from competition.  

This week Rick Allocca, the local wine expert and assistant manager at the Middletown store, shares his opinion on the Michel Torino Cuma Cabernet Sauvignon and Malbec.  

Both are organic wines from the Cafayate Valley in Argentina. According to the El Esteco Bodega, the winery was founded in 1892 when two French brothers David and Salvador plated their first vines. It is said that the local climate of the Cafayate Valley and beauty of the landscape is very conducive to quality grapes cultivation.  

The bodega, situated at the heart of the Salta Province in Argentina, is a very modern winery, which started producing organic wines in the early 90s.  According to wine importer Frederick Wildman and Sons, Ltd., the Michel Torino line of wines is representative of pure, clean environment. Essentially, Cuma means “clean and pure” in the language of the Aymara, who occupied the lofty elevations of northern Argentina before the Incas and have long since migrated throughout South America’s Altiplano, or high plains, the official El Esteco Web site states.  

The 2007 Cuma Cabernet Sauvignon (750 ml) selling at $12.99 at Spirits Unlimited Middletown has dark ruby-red color with purple highlights, Rick said. It has hints of spice, dark berries and black currants on the nose with a touch of red pepper and black olives. It has huge ripe fruit notes on the palate giving way to an elegant long finish.

  The Cuma Cabernet Sauvignon is an excellent wine to serve in good company.  

The 2007 Cuma Malbec (750 ml) priced at $8.99 per bottle is red-violet in color with aromas of rosemary, raisin, vanilla and plum jam, Rick said. It has ripe fruit palate, a combination of raisins and dates, with sweet yet soft tannins and a long finish with hints of spice and nuts.   

The Cuma Malbec is an excellent everyday wine to enjoy with hearty meals and comfort food.

Spirits Unlimited Middletown welcomed two wine specialists from Argentina on Friday, September 25 to sample three Argentine wines — Sangre De Vina Torrontes, Sangre De Vina Malbec and El Guardado Syrah. Notably, these three wines are featured in the 25% Case Discount Corner at the Middletown store.

From 4 p.m. until 6 p.m. Laura E. Ciacera and Miguel Cano shared their insight about the vineyards of San Juan area, the wines they were introducing and answered questions.

Ciacera, one of the owners and sales and marketing director of La Guarda vineyards, Argentina, explained how the San Juan area is working to produce some of the more interesting whites and reds that are appearing in American liquor stores at the moment.

Cano, president of Don Cano Wines Import Corp. in the New York/New Jersey region, is a wine producer from the up-and-coming San Juan region as well. He said the altitude and soil of the San Juan area help craft the complex wines that he was sampling at the store.

Overall, these wines are great buys, according to Rick Allocca, the local wine expert at the store.

Coming from the San Juan area of Argentina, this wine is ruby-red in color and exhibits aromas of leather, graphite, dry fruits and plum, Rick said. It is dry on the mid-palate with a long graceful finish, fine tannic structure and hints of smokiness, according to him. The wines goes well with grilled meats as well as veggies, but it is excellent with beef stew, Rick said.

On Sale: A liqueur that dates back 300 years

It was first made by monks in the Piedmont region of northern Italy about 300 years ago, according to the official Frangelico Web site.

In the Piedmont hills where wild hazelnuts were abundant, the monks used their skills at distillation to produce one of the world’s finest hazelnut liqueur. The modern Frangelico carries on that tradition in looks, presentation and quality.

The name is reportedly an abbreviation of Fra. Angelico, a hermit monk believed to have inhabited the magnificent Piedmont hills during the 17th century, according to the Web site.

The liqueur is produced through a four-stage distillation process. After the hazelnuts are shelled, toasted and crushed they are then infused in a solution of alcohol and water. Next, the infusion is distilled to produce a natural hazelnut distillate. In the following step, a number of natural extracts including cocoa and vanilla are blended with the hazelnut infusion and hazelnut distillate to create the Frangelico concentrate. Finally, the concentrate is blended with pure alcohol, sugar and water to achieve the required bottling strength. It is then laid down in vats for 6-8 weeks to allow the blend to marry together and mellow.

Produced with such care the resulting liqueur tastes of toasted hazelnuts combined with cocoa, vanilla berries and a host of other natural extracts that make up its complex flavor.
The color is pale gold, the smell has intense hazelnut aromas in it, while on the palate it makes it mark with pronounced but delicate hazelnut flavor and hints of vanilla and dark chocolate. Smooth, long finish with fragrant back-note, the Web site says.

Getting in the mood for Oktoberfest with Fall beers

No one can beat Germans in celebrating Fall. As the first dew drops of the season sparkle in Autumn sunlight, the mood is set for Oktoberfest and Fall beers. In Munich, the countdown is on.

Historically, Oktoberfest originated in Germany and is celebrated as a 16-day festival each year, according to Wikipedia. In 1994, the schedule was modified in response to German reunification so that if the first Sunday in October falls on the 1st or 2nd, then the festival will go on until October 3 German Unity Day. Thus, the festival is now 17 days when the first Sunday is October 2 and 18 days when it is October 1. The festival is held on an area named the Theresienwiese (field, or meadow, of Therese), often called d’ Wiesn for short.

Traditional festival fare includes Hendl (chicken), Schweinsbraten (roast pork), Haxn (knuckle of pork), Steckerlfisch (grilled fish on a stick), Würstel (sausages) along with Brezel (Pretzel), Knödeln (potato or bread dumplings), Käsespätzle (cheese noodles), Reiberdatschi (potato pancakes), Sauerkraut or Blaukraut (red cabbage) along with such Bavarian delicacies as Obatzda (a fatty, spiced cheese-butter concoction) and Weisswurst (a white sausage), according to Wikipedia.

The festival is usually celebrated during late September and early October. This year the 176 Munich Oktoberfest will be held from September 19 to October 4, according to the official festival site.

Reportedly, it is claimed to be world's largest fair, with some six million people attending every year, Wikipedia reports. In a news release, this year’s special attractions are listed as the brand new The Tower.

Designed by Charles Blume, The Tower is like a big playground with a numerous spectacles inside. One can feel the forces of nature as one will see a volcano erupt and get the feel of space travel with special 3-D glasses.

The Tower also has traditional elements like spinning wheels and rocking conveyor-belts. However, the most notable feature of The Tower is the view of the festival and the city of Munich from the top.

The next fun ride is billed as the Silberturm, that is also a tower but smaller, which one usually rides up on the side, according to the news release. The trip includes experiences ominously named as Free Fall or Jumping Effect.

If you are not planning to travel to Munich this fall, then just a short trip to the Spirits Unlimited store in Middletown will get you there virtually.

The Fine Art of Mixing Drinks: A must have for all connoisseurs of spirits

As we have the first few entries for our recipe contest come in, I would like to suggest a “must have” for all those who love to cook with wine and spirits.

It’s a book. “The Fine Art of Mixing Drinks” by David A. Embury. It’s got nothing to do with our recipe contest but is a must have for any cook and a good read for those who might not like to cook as well.

Also, chances are it’s out-of-print unless you are well connected with authentic bartenders who will always have a copy. The next step is to persuade them to sell it to you. Good luck with that! Or you can keep tuned in to the Spirits Unlimited Middletown blog where we bring you the latest news on things of interest to you and to us.

The book published in 1948, is a collection of cocktails from an attorney by trade. Interestingly, Embury was always at the “shaking-things-up” end of cocktail making while he entertained his guests. But it came upon him to shake things up with his pen and humor as he embarked on this project to categorize and catalog the cocktails of his time. Notably, according to Wikipedia, he was born on November 3, 1886 in Pine Woods, New York and died July 6, 1960 in New Rochelle, New York.

The book is noteworthy for its witty, highly opinionated and conversational tone, as well as its categorization of cocktails into two main types: aromatic and sour; its categorization of ingredients into three categories: the base, modifying agents, and special flavorings and coloring agents; and its 1:2:8 ratio (1 part sweet, 2 parts sour, 8 parts base) for sour type cocktails, according to Wikipedia.

However, you manage to read or buy a copy of this book for your possession or pleasure, here are some interesting facts.

According to Embury, a cocktail must have a visual appeal. One that is not attractive suffers from the “failure to launch” itself syndrome. The presentation, the color and the first sip are supposed to ignite passion in the consumer of the drink.

The next sip should tingle your imagination. The curiosity and the hint of something that you “can’t quite put your finger on” are all aspects of the cocktail’s very nature and reason for its existence, Embury said. It’s supposed to tease and excite without giving itself away.

A classic cocktail is one that increases your curiosity about its contents rather than indulge you in too much of any one taste, whether it’s sweet or fruity, according to Embury. In fact, he said a quality cocktail is never too sweet and never too strong on the alcohol end of things. Last and most important, good-quality, high-proof liquors make for good cocktails. And, don’t forget the ice please.

Robert Hess, author of The Essential Bartender’s Guide, is a sort-of modern day Embury himself as far as love for cocktails goes. Hess has been an employee of Microsoft since 1988, according to Wikipedia, and a co-founder of the Museum of the American Cocktail. Further, Hess, along with several other well-known cocktail personalities, founded The Chanticleer Society, a "Worldwide Organization of Cocktail Enthusiasts," Wikipedia states.

Hess qualifies Embury as someone who “with a deep passion for, as well as an opinion about, what it took to make a proper cocktail.”

Hess’s review which appears online on The Spirit World further states: Books which attempt to cram within their pages as many different cocktail recipes as possible are almost a dime a dozen, and can often be seen behind many bars. As a simple reference, I suppose they have their place, but Mr. Embury’s book isn’t a simple reference book. While it does contain a fair number of cocktail recipes, this is a book that is intended to be read. Its recipes, and more importantly the information and opinions around those recipes, are intended to be educational, and that is what sets this book apart from almost any other.”

Interestingly, Hess said if you were looking to buy the book some 10 years ago, you could get one around $40. Now, it’s gone up by a few hundred dollars.

Hess also chronicles how Mud Puddle Books, New York, came out with a reprint of this 1948 book: “A reprint was clearly in need, the problem was that not only was the book new enough as to still be covered under copyright, but nobody seemed to know who actually held the copyright to the book now that Mr. Embury himself had passed away. Enter Gregory Bohem, owner of “Mud Puddle” a New York publisher, as well as an avid collector of old cocktail books. He decided that he really, really, needed to come out with reprint of this book. Diligently he followed various leads, many of them dead-ends, until he finally located Mr. Embury’s only surviving relative, his daughter Ruth Embury. Mud Puddle was quickly able to arrange to do a reprint, and an excellently executed one at that.

Not only that, Chef Conroy will prepare the winning recipes himself. He has also give out additional culinary tools as prizes for recipes that really stood out.

The contest runs from now until the end of September and winners will be announced on the first week of October. The rules are simple.

To enter you simply have to email a recipe (spiritsmiddletown@gmail.com) that uses any wine or liquor. It could be a recipe for a cake or coffee, a dessert or a drink, an entrée or an appetizer. The possibilities are limitless.

The only conditions are: a) that it has to be your invention or alteration; and b) it has to have some use of a wine, liquor or fine spirits.

For example, a cake that you simplified, or a summer recipe that you made up or altered from an existing one. The objective is to share your creativity with others. You could also re-invent a recipe that was in your family for generations and which you may or may not have modified.

Spirits Middletown considers bringing Sonoma County winemakers to town

Liquor Operations Manager for Spirits Middletown Stuart Keats believes in constant innovation.

His latest aspiration is to bring Ferrari-Carano experts to town to introduce their award-winning wines to Middletown customers.

“To talk about wines is talk about your passion for creating it,” Keats said. “I want our customers to hear it from the real people. The soil, the climate, the topography — all goes into crafting the bottle you so confidently open at the table for family or friends. I am sure people will love to know the background story and understand their wines.”

The vision that inspired Don and Rhonda Carano is one of quality that is consistent with every vintage. Shunning profits and money, the couple wanted to create something that is memorable and guarantees satisfaction.

On the ground, Ferrari-Carano experts match soil to irrigation styles so that the area’s potential is reflected in the grapes cultivated. This in turn produces a wine the best reflects the organic environment of that region.

Director of Vineyard Operations Steve Domenichelli uses sustainable farming techniques such as recycling organic matter for use as mulch in the vineyards; planting cover crops and other plant species to avoid soil erosion, adding desirable nutrients back to the soil and to attract desirable insects; and integrating animals to naturally enhance biodiversity and nutrient recycling, according to the company Web site.

"We have over 1.1 million vines to tend to on roughly 1,400 acres of vineyards, and each vine is touched by human hands 6 to 8 times a season to ensure the highest quality fruit for our wines," Domenichelli said. "In addition, we believe that giving back to the environment balances out the ecosystem and enhances the quality of our fruit.”

Sarah Quider, white wine winemaker for Ferrari-Carano, employs gentle winemaking techniques, focusing on single vineyard sites for the Russian River Chardonnays, while blending wine for style, quality and multidimensional complexity that characterizes Ferrari-Carano's other white wines.

"My goal is to make complex, intense and seamless wines that are balanced in both richness and delicacy," Quider said. "We have such tremendous diversity in our vineyards because we are located in various appellations, each with unique micro-climates, soils and clones. It's my desire to express that diversity in our wines."

Winemaker Aaron Piotter spearheads Ferrari-Carano's red wine program housed in Alexander Valley.

"The vines tell us how to take care of the wines, and the wines tell us how to get the best from our vines," he said. "At Ferrari-Carano, we share a philosophy of using the experiences our vines and wines have taught us to ensure that each year we progress as winemakers and winegrowers. The Cupcake philosophy: Live Deliciously

The name suggests delicacy. The brand category is boutique wines. The target market is the upwardly mobile. The touch is soft and feminine.

Overall, a wine crafted with much thought and aims to please.

The wines were released into the market in late October last year, according to an Underdog Wine Merchants press release. These gourmet, award-winning wines come from the central California Coast where the weather tempers the balance of acid and sugars in the fruit. The result is a lower concentration of tannins that gives the grapes a more mellow composition.

Cupcake (750 ml) wines on sale at Spirits Middletown at $7.99 until August 25 include chardonnay, cabernet sauvignon, merlot, and sauvignon blanc.

While the grapes for the chardonnay, cabernet sauvignon and merlot are native to the central California Coast, those for the Sauvignon Blanc comes from the Marlborough valley of New Zealand, where the temperate climate favors a longer growing period, according to the vineyard.

After picking, the grapes are first placed in stainless steel tanks for cool fermentation and later aged in premium American-oak barrels. The intention is to present a bit of both — the fruitiness of the carefully cultivated grapes as well as the creamy touch as a result of the oak.

Adam Richardson, winemaker for Cupcake Vineyards and international winemaker for Underdog Wine Merchants, said, “When we make Cupcake, we put fruit, softness and richness at the top of our list. Everything, from the barrels we select to the way we ferment the wine, is done with these characteristics in mind. The end result is a rich and complex wine with layers of flavors and a long, smooth finish with a name that says it all.”
Tasting Notes from Cupcake Vineyards:
Cupcake Chardonnay was crafted to emphasize the Central Coast’s creamy and structured Chardonnay character. It starts off with a touch of apple, a hint of tropical fruits and is complimented by a balance of vanilla and spice. We used malolactic fermentation with aging in small barrels to provide a rich mid palate that develops into a long, smooth, satisfying finish. This wine pairs well with crab cakes, seared Ahi tuna on waffle crackers or fresh-baked French bread and cheese.

Rich and enticing, the Cupcake Cabernet Sauvignon is a balance between generous profiles of fruit and oak. This full-bodied yet smooth Cabernet Sauvignon displays soft tannins, with primary fruit flavors of blackberry, dark cherry and plums. The dark fruits melt with the flavors of mocha and toasty oak before ending with a long and silky finish. This wine pairs well with baked brie drizzled with honey or petite filet mignon with a cabernet reduction sauce.
Cupcake Sauvignon Blanc comes from the cool Marlborough valley of New Zealand. Here the grapes mature slowly, giving them complexity and a vibrant zing, reminiscent of your grandma’s lemon chiffon cupcake. The flavors are integrated, delighting the senses with Meyer lemons, Key limes and a finish that awakens the appetite. This wine pairs well with oysters on a half shell or with a rich and succulent Lobster Risotto.

Cupcake Merlot is a full-bodied yet smooth merlot displaying supple tannins. This is a softer, silkier Merlot with a good balance of oak and fruit. It starts with flavors of red cherries that evolve into decadent flavors of cocoa and espresso mingles into a plush, silky mocha finish. It was branded as an act of robbery, in the good sense of course, when Charles Bieler, Joel Gott, and Roger Scommegna started producing great quality wines at prices that robbed others of their profit margins.

Thus “The Show” was born.

This California cabernet sauvignon is sourced from grapes in the state’s central and north coast.

It is described as rich, refreshing, juicy, with a deep color and intensity. It has good aromatics according to most reviewers and carries hints of blackberry, vanilla from the oak, accompanied by a bit of cherry. Notably, this wine is aged in both French and American oak.

According to the three thieves, The Show is “anchored by full-bodied Cabernet, it also features Merlot for a touch of softness. Cabernet Franc imparts a bit of earthiness and flavor-enhancing acidity, while Petite Sirah and Petit Verdot give it a deep ruby color and a hint of violets on the nose.”

And of course, it delivers great value.

The wine made its way into the market in 2007 and is rated among the top 20 cabernets in its price point, and with the economy going slow, has gained in popularity in the last year.

The thieves claim that they partnered with an American icon, Nashville’s Hatch Show Print, for this wine. According to them, Hatch shares this creative streak. Since Barefoot 1.5 liter bottles have been offered at a reduced price point, the bottles have been flying off our shelves at Spirits Unlimited Middletown.

Now, at $9.99 for all 1.5 liter varieties of Barefoot, the opportunity to stock up on this great deal is slipping fast. According to Store Manager Raymond Kimble, it’s really a popular wine and he has been ordering more of it as consumer demands have escalated during the period of sale between July 29th and August 11.

The natural question that comes to mind is why is this brand so popular? I think it is because the Barefoot winemakers have successfully found the chemistry for “easy to understand appreciate” wines.

At it’s regular price, which is a little higher than the sale price until August 11 at Spirits Unlimited Middletown, the wine still is one of the “most sold” wines in the store. People who buy it claim they love to drink it.

A lot of the quality behind the wine comes from the personality of the winemaker
Joel Peterson. Growing up in the San Francisco Bay area, Peterson has been a crusader for high standards in wine making.

According to his online biography, Peterson had a working knowledge of European vineyards and vintages, along with a collection of headstrong opinions about what made good wine in his early youth. A graduate of Oregon State University, Peterson was a lab scientist, who made “money through wine writing and consulting, gaining a local reputation as a gifted taster (and tasteless punster).”

As his love for wines grew, Peterson had the opportunity to work with Joseph Swan — one of California's outstanding craftsmen of fine Zinfandel — to learn the art of traditional winemaking as practiced in Bordeaux and Burgundy. In 1976 Peterson founded Ravenswood in partnership with fellow wine lover Reed Foster (a Harvard MBA gone astray) and over the next half-dozen years, their fledgling operation moved from the rear corner of one willing winery to another. When Ravenswood finally turned a profit after a dozen years of operation, they settled on the northern edge of Sonoma, where the winery's tasting room is located, according to the company Web site.

Today, Peterson is known as an articulate spokesman and stylistic trendsetter who helped make Zinfandel the runaway phenomenon that it is today.

Rick: Spirits Unlimited Middletown's “go-to-guy” for wines

Rick Allocca, the “go-to-guy” at Spirits Unlimited Middletown, is the most unassuming person you would ever come across at any liquor store. But ask him anything you want to know about wines, you will be amazed by his depth of knowledge, his willingness to work with you to help you discover your palate, and his very charming and pleasant manners that takes the edge off your wine-shopping hassles.
Then you are left to ask yourself, how come he is so humble and unassuming?

According to Stuart Keats, Manager of Liquor Operations at Spirits Unlimited Middletown, Rick exemplifies what each member of the store is about: Helping the customers find and enjoy the best wines and spirits.

Rick’s passion for wines comes from his family table. Growing up in an Italian family in Middletown, dinner was always served with wine, as far as he remembers.

“My family is huge on wines,” he said. “Wine is as common as water in my family. My father is a big fan of the cabernet. He got me interested in wines. My grandfather too is big on wines. So for me it was a natural thing to get to know about wines.”

Looking back on his first day at the job at Spirits Unlimited Middletown, Rick shares his encounter with his first love: vintage wines!

“On my first day, I bought a case of mixed wines, a lot of them I have never heard before and within a week they were all gone,” Rick said. Trying various wines, learning about them, where they come from was a habit they kept growing on him.

“I think the reason I am so passionate about wines is because it is a natural occurring thing,” he said. “It has health benefits, can be shared with friends and family almost like music. Also, because the art of making a good wine involves so many people, from the one who plants, to the one who tends to it and then the whole process of harvesting and turning it into something special…it’s a very involved process and requires the expertise of many people to deliver a perfect product at your family table.”

As such, you can imagine Rick intends to make wine a big part of his adult life. “It’s something that I wanted to keep in my life, want to grow upon, learn more, keep around me and my family,” he said.

It has already grown on him since he started to work at Spirits Unlimited Middletown. He used to like the sweet, easy tasting wines before whereas now he is into more complex wines, Rick said.

His dream — “I would like to have my own vineyard.”

“Making your wine is leaving your mark on this world,” Rick said. “My great-grandfather used to make wine, and the tradition discontinued from my grandfather, who owned a deli store in Red Bank but did not pass the wine-making knowledge to my father. My dad wishes he had learned it. So, I would like to start a new legacy and continue that tradition that was lost from grandpa.”

“It’s personal, Rick said, “To me wine is a very personal experience.”

With a background in finance and budgeting and ample experience at bartending, Raymond Kimble has been associated with Spirits Unlimited Middletown since 2005.

“I was made aware of the opportunity to work here by a friend,” Kimble said. “Now, I will go nowhere else. I like being in the liquor business.”

He was in the Merchant Marines as a supply officer for 5 years and spent 10 years in finance during which he said he gained experience in ordering, budgeting and forecasting projections on sales.

Coming to Spirits Unlimited Middletown he applied his knowledge to test. He found he was good at it.

As the store manager at Spirits Unlimited Middletown, Kimble had just won the first place in Sparkle Day, a competition that judged the cleanliness and organizational layout of the stores.

He said the store is easy to shop as it has bigger aisles, the largest selection in the area, and is easy to get to. It is just off Route 35 North in Middletown, in a prime location with ample parking.

“The store,” Kimble said, “is clean, friendly, spacious, with experienced and helpful staff and the lowest price point in the market.”

“The volume of business that we do here is so huge that we are able to offer the deep discounts that we are known for,” Kimble said. “We offer labels for wine bottle favors, help with party planning and ordering, host wine tasting and special events at the store – all with an eye to satisfying the customer.”

As store manager, Kimble said he has learned more about wines and the business end of it. He is quick to share his expertise with others.

“I have been bartending since I was 18. I like keeping up with new items, knowing about popular choices and interacting with people,” Kimble said with a smile. “That’s what managing store is about. You see what customers need, you learn about their likes and dislikes, and you share your own knowledge with them so they come back again and again.”

Beer Buzz: Exit 4 and 11 — Homegrown and Smart

One has to commend the Flying Fish Brewing Company for innovation.

This New Jersey based microbrewery located in Cherry Hill, has created the perfect product line that stands out and is unique to the place it is produced from.

Living in the Garden State since early 2000, I know how exits on the New Jersey Turnpike or the Garden State Parkway serve to identify your existence on the map and situates you in context of others.

It is also a great icebreaker as in: “Oh you are off Exit 4, I used to live by Exit 8A myself. Funny we should meet.”

Sometimes exits work even better than Google maps or your lifeline, as in your GPS. Say for example, you live in a town in New Jersey that someone has not heard off and during a conversation when people ask you where you are from, you tell them the name of your hometown. Their response: A blank expression.

It is in moments like these that exits come handy. When they keep staring at you blankly, the immediate solution is tell them nearest exit on the NJTP or the GSP from your home. “Ahh,” they will say, “so you are from Central Jersey.” And with that you are one of them, you are not from nowhere anymore. You are in.

Conversely, if you try saying you are from Central Jersey to someone who asks you where you live, then they will stare blankly at you again. My suggestion, stick to the exits.

Exits work in this state. Whether you use them for your daily commute or as points of socio-cultural contact or to pass through the state. As such to have come with an idea that is so integral to life and living in this state, is a feather in Flying Fish’s cap.

The Exit Series, in the company’s own words, is a multi-year collection of extremely limited release beers celebrating the great state of New Jersey and the Jersey Turnpike.

Each beer in the product line will focus on the unique aspect of an individual exit, whether it’s an ingredient, attitude or weird event, the company says.

Further, smart people as they are, Flying Fish has declared that “the releases won’t follow a pattern, instead, they’ll bounce around the state as the whim strikes us.”

Clever. This way they are off the hook if nothing spectacular strikes them between Exits 4 and 11. It also gives them more flexibility in developing and marketing their product line.

The series was introduced with Exit 4, a Belgian-style beer that is hoppy, bordering on bitter on my palate. According to the company, Exit 4 was the first release because it was “close to home, right up the street from the Flying Fish brewery.”

On tasting it, I was quizzing myself as to what aspects of South Jersey — the Cherry Hill/ Mount Laurel area came to mind as I sipped. My first thought: I love shopping in Marlton, the Camden Aquarium is good for a day trip locally, and most important, Exit 4 is on my way to Philly or D.C.

Other than that, there is nothing striking about the area that came to my mind. It was and always has been, an exit on my way.

Similarly, the Exit 4 beer, in my opinion, borders on commonality. It aims to please, not excite. The company stuck to what it knows and does best, as in “because we were one of the first craft brewers to embrace Belgian-style beers, we’ve chosen as our representative beer, a Belgian trippel finished with plenty of American hops.”

On its Web site, the company describes it as a hazy “golden beer with the aroma of citrus and hints of banana and clove. Its predominant Belgian malt flavors give way to a subdued bitterness in the finish. Bottle conditioned, this beer will develop as it ages.”

Fast forward to Exit 11, the next release two weeks back. The theme is a confluence of flavors. American hops, characteristics of a wheat ale, and on the lighter side this time. As founder Gene Muller frames it: It’s for the summer!

In his words: Exit 11 is the point on the Turnpike where the Garden State Parkway branches off and takes hundreds of thousands of travelers to the renowned Jersey Shore. Our Exit 11 Wheat Ale is a fresh, citrus-y summer beer perfect for beachgoers and those who only wish they were headed ‘downa shore.’

Exit 11 is an American-style wheat beer brewed with English ale yeast and three Pacific Northwest hops, Columbus, Palisade and Amarillo. It is brewed with 50% Belgian pale malt and 50% white wheat, and is an ideal summer thirst quencher, with its bouquet of tangerines and apricots. Exit 11 is available only during this one-time release, and only until it sells out across New Jersey, Pennsylvania and Delaware.

The next one in the series should be Exit 13A in my opinion. It is the largest hub of activity in the north with Elizabeth Seaport, the Newark Liberty International airport, the Turnpike, oil refineries, the looming skyline of Jersey City, Newark and New York City. It represents the rugged transition of the Garden State to that of an industrial power; the nerve center of the transportation sector of the tri-state area; and an indispensable and quite ugly section of the state that has potential to overwhelm and awe with equal force.

Unfortunately, Exit 13 A is not on the list at Flying Fish.

GIANNI RUSSO

Gianni Russo has made a career of playing tough guys. Although
remembered most for his portrayal of Carlo Rizzi in The Godfather, his
first acting job, his career has spanned over 40 films including such
hits as The Freshman, Rush Hour, Any Given Sunday and Sea biscuit
as well as television roles in Kojak, The Rockford Files and Prison
Break.

Russo believes it's his crooning that separates him from the mob of
other on-screen wise guys. His debut CD Reflections paid homage to
such legendary singers as Dean Martin and Frank Sinatra. These icons
inspired him both personally and professionally. The CD released
through Triggerfish Entertainment, contains a bonus track where
Russo reminisces about the behind-the-scenes drama that took place
during the filming of The Godfather. Russo travels the country with his
orchestra to sold out appearances performing the music that has
influenced his Life.

Born in Manhattan and raised in Little Italy and Staten Island, Russo
overcame polio as a child to start his first "business" at the tender age
of twelve, selling pens and erasers on the street corners. At eighteen
Russo made his first trip to Miami, where he began to dabble in showbusiness,
working in nightclubs and hotspots, before deciding to
pursue acting and move to Hollywood.

Russo’s colorful life is currently being adapted into a feature film
starring Mark Wahlberg, to be directed by David O’Russell. A network
television show is in development where Gianni will serve as host and
co-producer. His follow up CD will be released in June 2008, and a
national launch of his Gianni Russo label wine is scheduled for later
this year.
